The vineyards are situated on predominantly brown clay-limestone soils, with some areas featuring siderolithic red clays and Kimmeridgian limestones. The 40-year-old vines are planted at a density of 4,500 vines per hectare, with an average yield of 35 hectoliters per hectare. The vineyards are managed using organic and biodynamic farming practices. The rosé is crafted through a combination of pressurized and bleeding methods, aiming to achieve a balance between delicate aromatics from pressing and structure. The fermentation process is slow and conducted at low temperatures using native yeasts. Malolactic fermentation takes place in stainless steel vats. The wine undergoes a short aging period of approximately 6 months before being bottled. ABV 13.5%
