The varietal is rarely found outside of the appellation, and is restrained in character, yet an important parent varietal to Sauvignon Blanc and Chenin Blanc.\u003c\/p\u003e\n\u003cp\u003eIt produces white wines with outstanding cellar potential. Firm and compact in youth and filling out with restrained yellow fruit, wax, floral and saline characters with age.\u003c\/p\u003e\n\u003cp\u003eUnlike a Vin Jaune, the 'En Billat' is Savagnin topped (ouillé method) up during maturation. \u003c\/p\u003e\n\u003cp\u003eIt is vinified without sulphur additions.
