The wine is delightful and offers a luscious, creamy texture that beautifully showcases the characteristics of all three grape varieties. The Pinot Noir and Pinot Blanc contribute to the aromatic profile, with enticing scents of red and yellow apple, as well as pear. The Chardonnay lends crispness to the wine, resulting in a refreshing finish with excellent acidity that brings balance. The vineyard boasts an average age of 30 years and benefits from a diverse terroir of Kimmeridgian marl and limestone soils. The winemaking process follows sustainable practices, with indigenous yeast fermentation in stainless steel tanks and aging on fine lees. After 30 months of cellaring on yeast, the wine is aged in the bottle for an additional 3 years before disgorgement, with a dosage of 3 grams per liter, resulting in an Extra Brut style. ABV 12.5%
