Its palate boasts a pronounced acidity, dryness, and intense minerality, gaining texture and consistency with bottle aging. The couple of vignerons has decided to follow the dictates of biodynamic agriculture both in the vineyard and in the cellar. Crafted from a blend of native white grape varieties, hand-picked and whole bunch pressed, the wine undergoes spontaneous fermentation in stainless steel tanks without temperature control. Eight months of lees contact in steel refine it further. Unfiltered and unclarified, this wine embodies the essence of its origin. Ideal with shellfish and seafood, it offers a sensorial journey into Sicilian terroir. ABV 12.5%
