On the palate, the tannins are smooth and silky, contributing to a pleasant amplitude with finesse. The "Servoisine" vineyard, located in the north of Givry near the Premier Cru "Clos du Cellier aux Moines," boasts vines aged over 45 years. With a total area of 0.67 hectares, it benefits from a south-east exposure at a medium altitude on a coteau, featuring dense and clay-rich soil. Grapes are meticulously hand-harvested and sorted to ensure their integrity. Cold pre-fermentation occurs for 4 to 6 days to extract phenolic components, with the grapes being partially destemmed. Full maceration lasts for 15 days with regular pigeages (cap punching), resulting in the concentration of tannins, perfumes, and color. Alcoholic fermentation takes place naturally with indigenous yeasts. After maceration, the free-run and press juices are aged exclusively in traditional Burgundian 228-liter barrels, and malolactic fermentation is fully conducted.
