Displays a beautiful garnet color that is clear and shiny. Aromas of small red fruits, such as raspberry and red currant, emerge on the nose after aeration. On the palate, the wine is juicy, generous, and perfectly balanced with a refreshing acidity. It is sourced from 10 small plots, including 3 plots of Premier Cru vineyards (En Sazenay, Champs-Martin, Clos L'Évêque). The climate and soil are characterized by a dominance of clay and limestone, with various exposures. Grapes are meticulously hand-harvested and sorted to ensure their integrity. Cold pre-fermentation lasts for 4 to 6 days to extract phenolic components, followed by full maceration for 15 days with pigeages (cap punching) and/or pumping-over. Alcoholic fermentation occurs naturally. After maceration, the free-run and press wines are aged separately. The aging process takes place for 70% in traditional Burgundian 228-liter barrels and 30% in stainless steel vats, lasting for 12 months, with around 10% new barrels used. ABV 14.5%
