Chiroubles Aux Craz 2020, this terroir of the heights, magnified by the entire harvest, places mauve flowers (lilies and lilacs) in the foreground. In its structure we find through a fresh tannin all the tactile frame of the floral-vegetal of the vintage. Grille-Midi chiroubles, tasty like a bowl of black cherries au jus. The Aux Craz fruit is from a south-facing vineyard that lies under the Col de Durbize at the top of the village. At 460 metres, the poor, thin soils mean the roots of Passot’s single hectare of 40-year-old vines need to penetrate the rock below. Here, the elevation and cooler microclimate tempers ripening, bringing cut and crispness to the wine’s fruit. Natural start in indigenous yeasts, vinification without SO2, 14 days in infusion with a small pumping over per day, control of temperatures below 25°C, malo fermentation carried out at 100%. 11 months maturation in cuve beton before bottling.
