While more restrained on the palate, it showcases reserved tannins that provide a certain rigor, which will soften over time. The Pinot Noir characteristics are evident, expressing the typicity of the terroir with its spicy/peppery aromas of licorice stick. As the tasting progresses, the power of the wine intensifies, displaying the phenomenon known as the "peacock's tail." At the end, the presence of chocolatey tannins imparts a distinctly warm and soft sensation, typical of the terroir. This wine pairs well with dishes such as lamb tagine and veal fillet with chanterelle mushrooms. The wine originates from a terroir characterized by clay-limestone soil. The vineyard itself has a vine age of 49 years and covers a surface area of 0.46 hectares, producing around 3,600 bottles. The grapes were carefully hand-harvested, ensuring their perfect health. The maceration process lasted for 18 days with two punch-downs performed daily. Following this, the wine was aged for a total of 21 months in oak barrels. ABV 13.5%
