100% Bacchus. This Bacchus has a zingy tropical nose, passionfruit, and grapefruit in the foreground, with hints of freshly cut grass. The palate has the classic crisp English finish, green apple, gooseberry, and elderflower notes shine bright. There is a long-textured finish from barrel aging on lees and the skin contact component. This year we worked with a single vineyard in West Sussex to produce our unique expression of Bacchus. The grapes come from one of the best Bacchus sites in the country, just next door to the Tillington Nyetimber vineyards, and were grown by an expert team producing fruit of supreme quality. In 2020 the Bacchus grapes were very aromatic. When tasted directly from the vine they had a wonderful floral note, with the perfect natural sugar and acid balance for the culinary style we love to make. Alex, our winemaker, has been working with Bacchus from this site for a few years now and has honed our approach to building wines of finesse. As an evolution to the previous vintages, 20% of the best fruit was hand sorted and foot stomped then macerated for 3 days pre-fermentation. This helps to build the weight and length of the wine, but also ensures aromatic intensity. 80% of the Bacchus was whole bunch pressed and fermented in temperature-controlled stainless-steel tanks. These fermentations each had different yeast used and varying temperatures of fermentation, each resulting wine had a specific place in mind in the final blend. One tank providing tropical thiol aromas of gooseberry & passionfruit, the other focusing on promoting the terpene aromas of rose petals and white citrus blossom. The skin contact component was hard-pressed and fermented in neutral oak, contributing to the aromatic complexity, texture, and length of the wine. All the Bacchus components were then aged on lees for 7 months, before being racked and blended. ABV 11.5%
