Bold, spicy aromas of charred wood and black tea leaves perfume ripe boysenberry and blackberry flavors in this wine. Sourced from organic and biodynamically farmed vines, it balances rich black fruit against an earthen, smoky undertow. The vineyard are pruned using the "Guyot" method. Soil worked by mounding and unmounding, then ploughed. Biological protection. Disbudding. Green harvesting and thinning of leaves. inthe cellar, the traditional method is followed, with complete destemming in open vats and the use of natural yeasts. Pigeage or remontage is done once a day.Ageing 14 months in French oak barrels, 30% of which are new. Slow malolactic fermentation. No racking. ABV 13%
