A ripe but reasonably fresh and airy nose features primarily notes of various dark berries and prominent earth nuances. There is very good volume for the appellation to the robust and unusually powerful flavors that deliver solid length on the slightly warm finish. Good quality here in a riper style. Our vineyard of Bourgogne Pinot noir is made of several plots located in Premeaux-Prissey. Vines have been planted between 1956-1965. Grapes are receiving the exact same care as the others grapes classified in Premier Cru, making it a qualitative wine. Surface : 2,97 hectares. (7,18 acres) Climate & Soil: Clay and limestony soil with clay predominance. To preserve their integrity, grapes are carefully harvested and sorted out by hand. Before beginning the alcoholic fermentation we make a cold pre-fermentation during 4 to 6 days to work on the phelonic component’s extraction. Grapes are previously partially destemmed. Then full maceration lasts for 15 days during which we’ll use only pigeages (punching the cap). Intensity and numbers are lead to the concentration of tannins, perfumes and colour. Alcoholic fermentation is realized with natural yeasts. After maceration, free and press wines are separated for aging. Aging process is taking place 60% in stainless steel tanks and 40% in traditional Burgundian 228 liters barrels. ABV 13.5%
