The ‘Fourchaume’ climat is situated to the north of the right-bank of the Serein, richer in style relative to the ‘Vaillons’, and more moderate in acidity. Droin reckons this can look more like a white Burgundy than a Chablis, and he’s not wrong.
The climat is drenched in sun via a south to south-west exposure, with a deep covering of brown and reddish clay soils that help maintain good levels of moisture through the summer months.
It is very good to drink young, with its notes of hawthorn, lily and peach. It is a very ample but mouth-watering wine. With time, wine tension will increase and it will take on a more saline, sea air aspect and therefore recover a more Chablis-like identity.

Fermented with indigenous yeasts, partly in stainless steel vats, partly in French oak barrels. Systematic malolactic fermentation followed by assemblage after 8 to 10 months. ABV 13%
