This wine showcases plenty of bright black cherry fruit, accompanied by gentle tannins that contribute to a well-rounded and generous body. It offers good length on the palate, and the finish is moderately dry.The Aux Craz fruit is from a south-facing vineyard that lies under the Col de Durbize at the top of the village. At 460 metres, the poor, thin soils mean the roots of Passot’s single hectare of 40-year-old vines need to penetrate the rock below. Here, the elevation and cooler microclimate tempers ripening, bringing cut and crispness to the wine’s fruit. Natural start in indigenous yeasts, vinification without SO2, 14 days in infusion with a small pumping over per day, control of temperatures below 25°C, malo fermentation carried out at 100%. 11 months maturation in cuve beton before bottling. ABV 14%
