Cherry color with black reflections.Nose of slightly spicy red fruits with some nuances of milk caramel.On the palate, dominance of red fruits and peppery notes with a small tannic structure and a finish full of finesse and elegance. The terroir ranges from stone and gravel to sand and limestone soils. The vineyards are divided into 61 separate parcels that are dispersed in different lieux-dits in Chateauneuf du Pape. Most of their vines are planted in two different soil types, rocks and stones over clay and limestone and they have also sandy soils as well. The average of their vines is more than 60 years of age, with some vines being more than 100 years old. The grapes are picked when ripe and then destemmed completely. They are then cooled to 12°C for a cold pre-maceration to extract maximum fruit and color. The different grape varieties are blended in vats and vinified with temperature control; 20 to 25% of the blend is punched during the alcoholic fermentation in order to extract a minimum of material. The maceration period is 10 to 12 days. This wine is aged in vats and bottled before the start of summer to preserve as much fruit and elegance as possible. ABV 14%
