Certified organic and in biodynamic conversion, the vineyard employs the guyot pruning technique and practices light soil cultivation. Inter-row cereal sowing, along with the use of manure and compost, further supports sustainable agriculture. Embracing biodynamic principles, the vineyard utilizes seven biodynamic preparations. The harvest is conducted at optimal maturity, meticulously selecting micro-parcels. Grapes undergo a meticulous sorting process on vibrating and aerodynamic sorting tables, followed by destemming. Gravity is employed to transfer the grapes. A pre-fermentation maceration takes place, ensuring optimal extraction. The gentle and extended extraction process continues during fermentation.
