The wine displays high-toned white fruit aromas, accompanied by notes of honeycomb and goat's milk. These flavors are enveloped in a delicate layer of sweet blossom, creating a harmonious and enticing bouquet. The vineyard in the town of Noizay features clay-limestone soils and is home to 55-year-old vines that are certified organic and biodynamic. The winemaking process involves manual harvesting with careful sorting in both the vineyard and the winery to eliminate any undesirable flavors caused by gray rot. The alcoholic fermentation takes place in barrels and lasts for 1 to 2 years. After fermentation, the wine is aged for 10 months in 400-liter barrels. ABV 12%
