The Brut Reserve from Vazart-Coquart is their "business card", as Jean-Pierre puts it. “It has to be good, as it sets the precedent for all we do.”
As typical from Vazart-Coquart, it's a Blanc de Blancs, blended from individual plots of old vine Chardonnay under the domaine parcels in the Grand Cru classified village of Chouilly. A 'non-vintage' blend, including 35% of the base vintage and 65% from the perpetual reserve established from 1982.
The wine ferments in stainless steel to promote freshness, before undergoing secondary fermentation in bottle, where it remains on the fine lees for a minimum of 2 years before disgorgement. It is labeled as a Brut, with 4.5g/l of dosage (which could see it labeled alternatively as an Extra Brut).
Aromas of lemon, green apple, slate like minerality, garden herbs and a whiff of biscuit. The palate is full of crystalline Chardonnay character, with a long, fine mousse and a little textural grip. Really assured winemaking.
