The climat of 'Vaillons' is situated on the left-bank of the Serein, taking its name from the Latin for 'little valley. It's an assemblage of 5 separate climats ((Epinottes, Roncières, Séchet, Chatains and Beugnons). The marine fossils are particularly rich here, with a thin top soil. Droin note the clay can become cloying and difficult to work with after rainfall. The valley is well sheltered from the winds, and receive plentiful morning sun.
Very classical in style and the left-bank of Chablis, with bags of sea air minerality, white florals and tension. One for Chablis purists.
Fermented via indigenous yeasts, in a combination of stainless steel and French oak barrels. Assemblage after 8-10 months. ABV 13%.
