100% Cabernet Sauvignon. "The substantial Riversdale Vineyard was planted in the mid-'90s, so the vines are relatively young. One can only imagine how good it will be in another 10 years. Not that this wine needs any excuses, it's classic cabernet, with blackcurrant, black olive and bay leaf aromas/flavours supported by firm tannins that are the markers of prime quality cabernet sauvignon." James Halliday. Low rainfall and warm temperatures in spring resulted in a very early harvest. All varietals performed exceptionally well with the standout being Cabernet Sauvignon. The fruit was hand harvested and transported to the winery where it was cooled overnight and hand sorted. Maceration lasted for 6 weeks with minimal pump overs and temperatures ranging from 12°-27°C. The wine was pressed to tank and allowed to settle for 7 days prior to oak maturation. A range of coopers were used in the wine's development. ABV 13.8%
