The Merlot for Le Piaf grows in a very special plot of the winery, Le Bois. Sand and gravel dominate the terroir here, which means that the wine develops a floral, very fruity and easily accessible character. Le Piaf can be uncorked and enjoyed immediately, it smells wonderfully of dark berries, fresh herbs and flowers. On the palate it is just as fruity as it is aromatic, elegant and with a nice train. A “Glouglou wine” as the French say. Chateau Daugay and its vineyards were formerly part of Chateau Angelus and have been run as an independent winery for around 50 years. Both modern and traditional, the vinification method takes place in stainless steel vats with temperature control. Attentive to its development, the cellar master regularly carries out gentle extractions, carried out by manual pumping over or pigeage. After this first vatting stage, which lasts 3 to 4 weeks, the wines will undergo their long malolactic fermentation in stainless steel vats and/or in new barrels. The aging lasts 18 months, for 1/3 in new barrels, 1/3 in barrels of one wine, and the rest in stainless steel vats. ABV 12.5%
