Aligoté is the second white varietal of Burgundy, gaining popularity in a warming climate for it's good acidity. In the old days, this attribute saw it co-planted with Chardonnay for this purpose. Upon phyloxera decimating the worlds vineyards, there was little incentive to replant, so the varietal lost favour.
Largely planted to the Bourgogne classified sites in Burgundy, it is however particularly desirable from old vines, where the yields are reduced (it loves to bear fruit) and the small berries provide concentration and flavour development.
The Domaine Chavy-Chouet Bourgogne Aligoté is one such example, sourced from 2 ha. of 60+ year old vines planted on clay soils on the plain of Puligny-Montrachet. The vineyard name translates to "The Little Pear Trees".
