It presents a brilliant and intense garnet color. The nose initially reveals a lovely, somewhat sweet and spicy character, reminiscent of gingerbread and cloves. As it evolves, it becomes more focused on licorice, with a floral touch adding elegance. The oak aging imparts notes of mocha, nutmeg, and cinnamon. On the palate, the wine offers a smooth and delicate acidulous juice. It boasts a superb texture akin to taffeta and velvet, attributed to the presence of beautiful, ripe, and sweet tannins derived from grapes perfectly ripened within the shelter of the enclosed vineyard walls. The mentioned licorice notes are accompanied by aromas of cherry pit, providing a unique "sweet/salty" impression. This ethereal and pure wine, with its lace-like characteristics, culminates in a saline and elegant finish, already delivering great pleasure. It pairs well with dishes such as guinea fowl and beef tataki. The wine comes from a terroir characterized by clay-limestone soil, with the vineyard boasting an impressive age of 57 years and covering a surface area of 1.8 hectares. It yields a production of approximately 9,500 bottles. The grapes were carefully hand-harvested, ensuring their perfect health. The maceration process lasted for 20 days with two punch-downs performed daily. Following this, the wine was aged for a total of 21 months in oak barrels. ABV 13.5%
