Redcurrant and cranberry on the nose – vivid and elegant. Lovely meaty notes on the palate, with a translucent quality to the fruit – excellent definition and clarity. Certainly light, too, but no lack of flavour. Most enjoyable. This ‘cuvée’ comes from a small plot (240 ha) situated on very steep slopes exposed to the hot sun. Lasts 25 days with 1 pumping-over and 1 punching of the cap per day, the fermentation process takes place with natural yeasts between 28° and 34°C thanks to temperature controlled tanks.
