Aligoté may play second fiddle to Chardonnay in Burgundy, but it's popularity is gaining pace among the region's vigneron, international sommelier set and curious wine explorers. 

Much of this is down to a warming climate. Relative to Chardonnay, Aligoté ripens late, retaining electric acidity and typically a degree or two less alcohol. Qualities that are now playing to its advantage. Naturally, the varietal wants to bear high yields, but planted in poor soils (limestone rich) and from sought-after old vine sites, it can produce brilliant wine of complexity, a coolness of fruit expression and livewire tension.
