Beaune Les Toussaints 1er Cru

Delicately aromatic wine with hints of violet petals. It showcases flavors of dark plum and blueberry, with a pleasing density that maintains an elegant balance. The tannins are present, structured, and contribute to the wine's overall harmony. Floral undertones, combined with well-managed tartaric acid and sapidity, create a gratifying taste experience that lingers in the finish. Vineyard practices for this wine include Guyot pruning, mounding and ploughing of soil, biological protection, disbudding, and green harvesting with leaf thinning. In the cellar, the grapes are hand-harvested and completely destemmed. They undergo fermentation in traditional open vats with daily punching down or pumping over. The wines are aged for 14 months in 30% new barriques, allowing them to mature naturally after a slow malolactic fermentation. They are then bottled by gravity without any fining or filtration.
