The Pouilly-Fuissé Village is produced from vines in Solutré, on a north-facing parcels that tends to ripen later than their south and south east facing parcels. As the climate warms, north facing sites are holding ever more importance.
The seven parcels planted between 1958 and 1980, on the classic clay and limestone soils of Burgundy.
It's a smart wine, with a linear and direct character, even in warmer vintages. Balanced, tangy and lightly spiced with a lingering and building texture in the mouth. Well worth seeking out and terrific value in a Burgundy context, succeeding in offering up the points of difference Chardonnay can offer here.
Brothers Camille and Mathieu Paquet have converted to biodynamic viticulture and are among the champions of the appellation, adapting methods of pruning and trellising. The profile of Pouilly-Fuissé is increasingly revered, whilst their bottlings of Saint-Véran should be on every Burgundy enthusiasts radar.
