Aligoté is the second white varietal of Burgundy, gaining popularity in a warming climate for it's good acidity. In the old days, this attribute saw it co-planted with Chardonnay for this purpose. Upon phyloxera decimating the worlds vineyards, there was little incentive to replant, so the varietal lost favour.
Largely planted to the Bourgogne classified sites in Burgundy, it is however particularly desirable from old vines, where the yields are reduced (it loves to bear fruit) and the small berries provide concentration and flavour development.
The Domaine Chavy-Chouet Bourgogne Aligoté is one such example, from a 2 ha plot in Puligny; 60-year-old vines, deep soil with lots of clay, ageing in stainless and old barrels.
