Chablis

A terrific introduction to the wines of Droin and the Chablis region. A variety of exposures and soils of varying bands of limestone with marine fossils contribute to this bottling. 

The top vintages are generous and lively in youth, with lemon, oyster shell and flint. A decade on from release, the wine gains in power and interest.

Fermented employing indigenous yeasts in stainless steel vats. Systematic malolactic fermentation followed by assemblage after 8 to 10 months. Fining if necessary, light filtration and bottling. ABV 12.5%
