The set of single vineyard bottlings under progressive Champagne producer Pierre Gerbais, are a brilliant demonstration of what gets us excited about the Grower category.
The Champ Viole is 100% Chardonnay sourced from a special site in the Celles-sur-Ource of Champagne, where the soils are more akin to Chablis than mainland Champagne. South facing on a mid-slope and limestone rich soils. Blended from a solera reserve started in 2011 and spending 36 months on the fine lees ahead of disgorge. Distinctly natural in feel, with minimal addition of sulphur at bottling.
