Vineyard management involves simple Guyot pruning, manual harvest in crates, sorting table, and destemming, followed by gravity filling. The winemaking process includes a cold maceration for several days, alcoholic fermentation, and an extended maceration period. The aging process takes place in barrels, with a portion of new barrels, for a duration of 12 months. A racking is performed in July, followed by barrel-to-barrel egg white fining. The wine is bottled without filtration.
