In general, Olivier Lamy's pinots are worked on the finesse of the fruit and the elegance of the material. We find this frame in his Santenay but in a dimension a little more greedy, more extracted. The result is an intense Pinot with aromas of black fruit, violet and faded rose. Then come notes of spices with black pepper and nutmeg as well as truffle and smoky notes. The palate offers great energy and a slightly more velvety texture than usual for this 2019 vintage. Great finesse of the tannins and beautiful pinoting length. Surrounded by Premier Cru sites, the 'Les Hâtes' vineyard is arguably one of the best village terroirs in Santenay. Lamy's tiny 0.67 hectare plot is in the original Clos - the walled part of the vineyard. Maceration in vats for 20 days. Punching down and pumping over according to vintage. Malolactic fermentation in barrels for 1 to 3 years. 12 to 18 months in one to three year old barrels. Fining and filtration if necessary. ABV 13%
