Bernhard Bouvier is among a group of top Burgundy producers known as 'Les Aligoteurs', who champion Aligote, the somewhat forgotten white varietal of Burgundy. The varietal was once commonly co-planted among Chardonnay in some of the top vineyards of the appellation, lending a vital energy and acid line. As the region warms up, it's a varietal becoming increasingly topical, and making a case for wider planting.
Aligote from old vines ('vieilles vignes') are particularly sought-after, as here with Bouvier, who also produces a version with no added sulphur ('sans souffre').
The wine is aged for 18 months in oak barrels of 600 liters, 30% of which are new. It is a terrific aperitif, as well as an accompanyment for seafood, vegetable salads and fish dishes.
