Vin Jaune or 'yellow wine' is the icon wine of the Jura appellation. Produced from 100% Savagnin and matured for a minimum of 6 years and 3 months in barrel, without topping up the juice.

Typically, around 38% of the wine evaporates during this period, which is known as the angel's share. A thin veil of yeast forms on the surface (Sous Voille). 

The result is bone dry wine (the flor eating excess sugar), with intensely concentrated and oxidative characters of exotic nuts, drief fruits, curry and minerality (wet stone and salt).  Similar traits to fino sherry yet not fortified and with a more restrained alcohol.

Ganevat's 2012 release spent 7 years in barrel and is produced from old vine Savagnin grown on blue marl. It is full bodied, long and complex with potential to age for decades. As tradition, these are bottled in 62cl glass bottles.
