Saumur-Champigny Les Memoires

The color is intense, dense and concentrated ruby red. The nose reveals subtle minty nuances, red fruit liqueur or still wild strawberry. On the palate, the attack is straight and powerful, with sensuality immediately suggesting the full potential of a great terroir. The Clos is a vineyard of 0.8 hectareswith old vines that were planted in 1904 and overlooks the Loire River. The vineyard practices include light tillage, which helps preserve the old vines and maintain a diverse range of flowers. The grapes are harvested manually in boxes and undergo sorting on a table before being vatted using a treadmill. Fermentation takes place in open cement vats with a capacity of 45 hectoliters, at temperatures ranging from 16 to 22 degrees Celsius, allowing for maximum extraction of aromas and richness. The fermentation process concludes at a temperature of 24 degrees. The duration of fermentation spans from 10 to 18 days. ABV 13.5%
