Aurélien Laherte’s Ultradition is a blend of 60% Pinot Meunier, 30% Chardonnay, and 10% Pinot Noir from eight villages in the Côteaux Sud d'Épernay and Vallée De La Marne, grown ecologically on limestone soils. The base wine is vinified in large format foudres, tanks, and oak barrels, with partial malolactic fermentation. The assemblage includes 40% reserve wines aged in barrel, and the wine matures for 6 months on fine lees in the bottle before disgorgement. It presents a pale straw color with a lacy white mousse and a delicate yet persistent bead. Aromas of yeast lees, baked bread, citrus, oily toast, and almond are captivating. The palate is vividly sculptured, combining tension, intensity, and richness with citrusy yeast lees and toasty baked bread flavors, ending with a stimulating finish of subtle cashew and chalky minerality. It concludes long and refined with a chiselled feel. Drink over the next 4-5 years. Alc. 12.5%.
