Sancerre Blanc 'Le Paradis'

'Le Paradis' is a steeply, south facing single vineyard of Sauvignon Blanc in Sancerre, characterised by its limestone soils. Vacheron produce a top example from this revered site, from old vines and biodynamically certified viticulture.

As with all the vineyard bottlings of Vacheron, they pick at full ripeness, and keep the vinification consistent to highlight particularities of terroir. Fermentation and maturation in large, upright oak vats.  

The wine plays on a concentrated fruit core of gooseberry, elderflower and pear, with white flowers, and a saline character. The palate is richly concentrated and tense, and it will be fascinating to revisit the wine for a decade on.
